Instructions
 

  • Combine all salad ingredients: In a spacious mixing bowl, gently combine the sliced cucumbers, halved cherry tomatoes, thinly sliced yellow bell pepper, pitted Kalamata olives, thinly sliced red onion, and cubed feta cheese. Give it a gentle toss and set this vibrant mix aside.
  • Prepare the light dressing: In a small blender (such as a bullet blender, mini chopper, or using an immersion blender), add all the dressing ingredients: olive oil, red wine vinegar, fresh lemon juice, dried oregano, minced garlic, keto-friendly sweetener, Dijon mustard, a pinch of salt, and a pinch of black pepper.
