- 3 1/2 cups chicken broth low-sodium recommended for health
- 1 bay leaf
- 3 cups cooked chicken chopped (such as shredded rotisserie chicken or lean breast)
- 2 cups frozen cauliflower rice
- 1/2 cup fresh lemon juice
- 1 large egg
- fresh lemon slices for garnish

In a large pot or saucepan over medium heat, gently warm the olive oil. Add the chopped onion, along with a light seasoning of salt and pepper. Sauté until the onion becomes soft and translucent, about 5-7 minutes.
Pour in the chicken broth and add the bay leaf to the pot. Bring the mixture to a gentle simmer. Once simmering, stir in the cooked chicken and cauliflower rice. Let it continue to simmer for about 10 minutes, or until the cauliflower rice is tender.
While the soup simmers, in a separate medium bowl, whisk together the fresh lemon juice and the egg until they are well combined. To prevent the egg from scrambling, slowly ladle about 1 cup of the hot broth from the simmering soup into the lemon-egg mixture, whisking constantly.
Carefully pour the tempered lemon-egg mixture back into the large pot with the soup, whisking continuously as you add it. This will slightly thicken the soup and give it a creamy texture. Remove and discard the bay leaf. Taste the soup and adjust the seasonings with more salt and pepper if needed. Serve warm, garnished with fresh lemon slices and a sprinkle of chopped parsley or green onions for extra flavor.
