Ingredients
  

  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • salt to taste
  • freshly ground black pepper to taste
  • 3 1/2 cups chicken broth low-sodium recommended for health
  • 1 bay leaf
  • 3 cups cooked chicken chopped (such as shredded rotisserie chicken or lean breast)
  • 2 cups frozen cauliflower rice
  • 1/2 cup fresh lemon juice
  • 1 large egg
  • fresh lemon slices for garnish
  • chopped parsley or green onions for garnish

Instructions
 

  • In a large pot or saucepan over medium heat, gently warm the olive oil. Add the chopped onion, along with a light seasoning of salt and pepper. Sauté until the onion becomes soft and translucent, about 5-7 minutes.
  • Pour in the chicken broth and add the bay leaf to the pot. Bring the mixture to a gentle simmer. Once simmering, stir in the cooked chicken and cauliflower rice. Let it continue to simmer for about 10 minutes, or until the cauliflower rice is tender.
  • While the soup simmers, in a separate medium bowl, whisk together the fresh lemon juice and the egg until they are well combined. To prevent the egg from scrambling, slowly ladle about 1 cup of the hot broth from the simmering soup into the lemon-egg mixture, whisking constantly.
  • Carefully pour the tempered lemon-egg mixture back into the large pot with the soup, whisking continuously as you add it. This will slightly thicken the soup and give it a creamy texture. Remove and discard the bay leaf. Taste the soup and adjust the seasonings with more salt and pepper if needed. Serve warm, garnished with fresh lemon slices and a sprinkle of chopped parsley or green onions for extra flavor.

Notes
