Ingredients
  

  • 1 (14.75 ounce) can flaked salmon drained (or 2 cups cooked flaked salmon), skin and bones removed
  • ½ cup dried keto breadcrumbs or almond flour
  • 1 large egg
  • 2 tablespoons mayonnaise (full-fat for keto) or plain Greek yogurt for a lighter option
  • 1 green onion chopped
  • 1 tablespoon fresh chopped dill
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper or to taste
  • 1 tablespoon olive oil for frying

Instructions
 

  • In a large mixing bowl, gently whisk together the egg, mayonnaise (or yogurt), chopped green onion, fresh dill, Dijon mustard, salt, and pepper until everything is smoothly combined.
  • Carefully fold in the flaked salmon and keto breadcrumbs (or almond flour) until they are just mixed. Be gentle to avoid overmixing, which helps keep your patties light and tender.
  • Divide the mixture into 8 equal portions and lightly form them into ½-inch thick patties. Remember not to press them too tightly for the crispiest, most delicious results.
  • Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the salmon patties into the skillet. Cook them for 3-4 minutes on each side, or until they turn beautifully golden brown and crispy. (For an even healthier approach, you can air fry or bake them until golden and cooked through!)
