Equipment

  • Mixing Bowl
  • Plastic Wrap
  • Skillet

Ingredients

  • 1.5 pounds ground pork
  • 2 tablespoons sugar-free maple syrup
  • 1 tablespoon avocado oil
  • 2 teaspoons fresh sage finely chopped
  • 1 teaspoon fresh thyme finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon fennel seeds
  • 0.5 teaspoon dried marjoram
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon red pepper flakes (optional, for a hint of spice)
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon freshly ground black pepper

Instructions

  • Whisk Your Spices: In a small bowl, combine the salt, black pepper, fennel seeds, dried marjoram, garlic powder, red pepper flakes, and ground nutmeg. Give them a good whisk to mix everything evenly.
  • Combine & Flavor: Place your ground pork in a large mixing bowl. Sprinkle the whisked spice blend and the fresh chopped sage and thyme over the pork. Drizzle with the sugar-free maple syrup.
  • Gentle Mix: Gently mix all ingredients together until just combined. Be careful not to overmix, as this helps keep the patties wonderfully tender.
  • Chill for Flavor: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or even better, overnight. This resting time really lets the flavors meld beautifully into the pork.
  • Form Patties: Divide the mixture into 12 equal portions. Shape each portion into a flat, round patty. For best results and even cooking, try to make them all the same size.
  • Cook to Perfection: Heat a large skillet over medium heat. Add the avocado oil. Cook the patties in batches for several minutes on each side until they're beautifully browned and cooked through. Gently press them with a spatula to maintain their shape.

Notes

Pro tip: Lightly oil your hands or wet them to prevent sticking while shaping! Ensure they reach an internal temperature of 145°F (63°C) for safe eating.
