  • 1 packet dry French onion soup mix like Lipton or Knorr

  • 1/2 cup shredded Gruyère or Swiss cheese
  • 1 small onion finely diced

Glaze

  • 1 tablespoon butter
  • 1 medium onion thinly sliced
  • 1 teaspoon sugar
  • 1 tablespoon Worcestershire sauce for glaze
  • 1/4 cup beef broth for glaze
  • 1 tablespoon ketchup

  • Get Ready: Preheat your oven to 350°F (175°C). Lightly grease or line a loaf pan with parchment paper for easy removal.
  • Mix the Meatloaf: In a large bowl, gently combine the ground beef, dry onion soup mix, breadcrumbs, eggs, 1/2 cup beef broth, 1 tablespoon Worcestershire sauce, Dijon mustard, shredded cheese, diced small onion, fresh parsley, and black pepper. Use your hands to mix everything until just combined – try not to overmix to keep it tender!
  • Shape and Bake: Press the meat mixture evenly into your prepared loaf pan. Place it into the preheated oven and bake for 40 minutes.
  • Prepare the Glaze: While the meatloaf is baking, let's make that wonderful onion glaze! In a skillet over medium heat, melt the butter. Add the thinly sliced medium onion and sugar, cooking gently for about 10-12 minutes until the onions turn a beautiful deep golden brown. Keep a close eye on them to prevent burning.
  • Thicken the Glaze: Stir in the remaining 1 tablespoon Worcestershire sauce, 1/4 cup beef broth, and ketchup to the caramelized onions. Let it simmer for 2-3 minutes until it thickens slightly into a rich, savory glaze.
  • Glaze and Finish Baking: Carefully spoon this flavorful onion glaze evenly over the partially baked meatloaf. Return the glazed meatloaf to the oven and continue baking for another 15-20 minutes, or until the internal temperature reaches a safe 160°F (71°C).
