Easy Instant Pot Pork Chops and Gravy

Ingredients
  

  • 2 tablespoons olive oil
  • 4-6 thick-cut boneless pork chops
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 cups low-sodium broth (chicken, beef, or vegetable)
  • 1 packet ranch dressing mix
  • 1 packet brown gravy mix
  • 2 cups homemade cream of chicken soup (see notes for quick option)

Thickening Slurry (Optional)

  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions
 

  • Warm the olive oil in your Instant Pot using the "Saute" setting. Season the pork chops on both sides with black pepper and garlic powder. Sear the chops for about 2-3 minutes per side until lightly browned. Remove them and set aside on a plate.
  • Pour the low-sodium broth into the pot, using a spatula to scrape up any delicious browned bits from the bottom (this adds flavor and prevents sticking!). Gently place the seared pork chops back into the Instant Pot. Evenly sprinkle the ranch dressing mix and brown gravy mix over the chops, stirring just enough to moisten the dry mixes with the broth.
  • Secure the lid and ensure the venting knob is sealed. Cook on high pressure for 15 minutes. Once cooking is complete, allow the pressure to release naturally for about 10 minutes, then manually release any remaining pressure.
  • Carefully remove the tender pork chops from the pot. Stir in the homemade cream of chicken soup until the gravy is smooth and well combined. If you prefer, you can shred or chop the pork chops into smaller pieces before returning them to the gravy, or simply serve them whole.
  • For a thicker gravy, whisk together the optional cornstarch and water to create a slurry. Stir this into the gravy in the Instant Pot and let it simmer for a few minutes until it thickens to your desired consistency. Serve hot and enjoy!

Notes

Quick option for cream of chicken soup: You can use store-bought condensed cream of chicken soup if homemade is not available.
