  • 2 large eggs at room temperature
  • 6 tablespoons vegetable oil or a healthier choice like avocado or olive oil
  • 0.5 cup granulated sugar
  • 1 teaspoon almond extract or vanilla, lemon, or orange extract for a twist
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 cups powdered sugar sifted for smoothness
  • 1 teaspoon almond extract or vanilla extract

  • 3-4 tablespoons warm heavy whipping cream or milk
  • Festive Christmas sprinkles like nonpareils or sugar crystals

Instructions
 

  • In a large mixing bowl, gently whisk together the eggs, your chosen oil, granulated sugar, and almond extract until everything is nicely blended.
  • Gradually stir in the all-purpose flour, baking powder, and that little pinch of salt. Mix until a soft, uniform dough comes together.
  • Roll the dough into small, tablespoon-sized balls. Arrange them on a plate or tray and pop them into the refrigerator to chill for at least one hour, or speed things up in the freezer for 15-20 minutes. This helps them bake beautifully!
  • Line a baking sheet with parchment paper. Place the chilled dough balls on the sheet, leaving a bit of space between each one.
  • Preheat your oven to 350°F (175°C). Bake the cookies for about 8-10 minutes, or until their tops are set and feel firm, and the bottoms are just slightly golden. The tops should largely remain white.
  • Carefully transfer the baked cookies to a wire rack. Let them cool down entirely before you even think about glazing them.
  • In a small bowl, combine the sifted powdered sugar, almond extract, a pinch of salt, and 3-4 tablespoons of warm cream or milk. Whisk until you have a smooth, pourable, yet creamy glaze. Add more warm cream, if needed, to reach your desired consistency.
  • Take each cooled cookie and dip its top into the delicious glaze. Immediately after dipping, shower them with your favorite Christmas sprinkles for that perfect festive touch!
