Easy Italian Meatloaf

Ingredients
  

  • 1 pound lean ground beef
  • 0.5 pound lean ground pork
  • 1 cup Italian breadcrumbs
  • 0.75 cup grated Parmesan cheese
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 large eggs
  • 0.5 cup milk low-fat if desired
  • 1 cup marinara sauce divided
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • freshly ground black pepper to taste
  • 0.5 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan, or line it with parchment paper for effortless cleanup.
  • In a large bowl, combine the lean ground beef, ground pork, Italian breadcrumbs, Parmesan cheese, chopped onion, minced garlic, eggs, milk, ½ cup of marinara sauce, Italian seasoning, salt, and pepper. Gently mix everything together until just combined. Overmixing can make your meatloaf tough, so stop as soon as it looks uniform!
  • Transfer the meat mixture into your prepared loaf pan. Gently press it into an even loaf shape. Spread the remaining ½ cup of marinara sauce evenly over the top.
  • Bake the meatloaf in the preheated oven for about 50-60 minutes, or until an internal meat thermometer reads 160°F (71°C). For the last few minutes, sprinkle the shredded mozzarella cheese over the top and return to the oven until melted and bubbly.
  • Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Garnish with fresh chopped parsley and serve warm.
