Easy Keto Beef Braciole

Ingredients
  

  • 1.5 pounds top round roast sliced into 8 very thin pieces
  • 28 ounce can crushed tomatoes choose the lowest carb option
  • 3/4 cup grated Parmesan cheese
  • 6 cloves garlic minced and divided
  • 1/2 cup fresh basil chopped and divided
  • 1/3 cup fresh parsley chopped
  • 1/3 cup white wine like Pinot Grigio
  • 1/4 cup pine nuts pignoli
  • 8 slices prosciutto
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Prepare the Braciole Rolls: Lay out each thin slice of beef. Place one slice of prosciutto on top of each. Sprinkle a portion of the pine nuts and 4 cloves of minced garlic (reserving 2 cloves for the sauce) over the prosciutto. Add the chopped parsley and most of the basil (saving 2 tablespoons for the sauce). Finish with a sprinkle of grated Parmesan cheese. Carefully roll up each piece of beef tightly and secure it with 3 pieces of kitchen twine or toothpicks. Repeat for all 8 slices.
  • Brown the Braciole: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Carefully place the braciole rolls in the skillet and brown them well on all sides until golden. Once browned, remove them and set them aside.
  • Build the Sauce: In the same skillet, add the reserved 2 cloves of minced garlic and cook for about 20 seconds, being careful not to let it brown. Pour in the white wine, scraping up all the delicious browned bits from the bottom of the pan to deglaze.
  • Simmer in Sauce: Stir in the crushed tomatoes, the remaining 2 tablespoons of basil, salt, and pepper into the deglazed pan. Gently place the browned braciole rolls back into the sauce. Bring to a gentle simmer, then cover the skillet and let it cook on medium-low heat for about an hour, or until the beef is wonderfully tender. Stir occasionally to prevent sticking.
  • Serve: Serve hot with plenty of the flavorful sauce spooned over the top.
