Ingredients
  

  • 16 ounces cooked chicken diced, about 2 cups
  • 1 batch homemade Keto Alfredo Sauce prepared separately
  • 2 cups shredded mozzarella cheese divided
  • 9 ounces frozen spinach thawed and thoroughly drained
  • 8 ounces baby bella mushrooms thinly sliced
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil

Instructions
 

  • Warm up your oven to 400°F (200°C).
  • Whip up your Keto Alfredo Sauce as directed, then set it aside to cool down a bit while you get the other ingredients ready.
  • Heat the olive oil in a big skillet. Add the sliced mushrooms and sauté them until they get a lovely golden color. Take them out and let them cool a little.
  • In a spacious mixing bowl, combine the cooled mushrooms, diced chicken, chicken broth, well-drained spinach, all that delicious Alfredo sauce, and 1 cup of the mozzarella cheese.
  • Stir everything together until it's perfectly mixed. Then, pour this creamy mixture into a 9x9 inch casserole dish that you've lightly sprayed with olive oil.
  • Sprinkle the rest of the shredded mozzarella cheese evenly over the top.
  • Bake for about 25 minutes, or until the cheese on top is golden and bubbling beautifully.
  • Let the casserole cool down for a few minutes before serving to let it set perfectly.
