Ingredients
  

For the Cinnamon Swirl

  • 2/3 cup almond flour
  • 1/3 cup sugar-free brown sugar substitute packed
  • 1.5 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/4 cup melted butter
  • 1/3 cup chopped pecans optional, for extra crunch!

For the Main Cake Batter

  • 2 cups almond flour
  • 3/4 cup sugar-free granulated sweetener
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs beaten
  • 1/2 cup plain Greek Yogurt or sour cream
  • 2 tsp vanilla extract

For the Icing (Optional)

  • 1/2 cup sugar-free powdered sweetener
  • 2 tbsp heavy cream
  • 0.5 tsp vanilla extract
  • Water as needed (to thin)

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch metal cake pan with butter or cooking spray. For super easy removal, create a "sling" with parchment paper that overhangs the sides of the pan.
  • In a medium bowl, combine all the cinnamon swirl ingredients. You'll get a nice thick mixture – set it aside for a moment.
  • In a large mixing bowl, whisk together the almond flour, granulated sweetener, baking powder, baking soda, and salt. Then, gently stir in the beaten eggs, Greek yogurt (or sour cream), and vanilla extract until just combined. Pour this delicious batter into your prepared cake pan.
  • Spoon dollops of your cinnamon mixture evenly over the cake batter. As it bakes, the cake batter will rise around these dollops, beautifully creating that signature cinnamon swirl effect!
  • Pop the pan into your preheated oven and bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let it cool in the pan for 15-30 minutes – patience makes for perfect slices!
  • While the cake cools, whisk together the powdered sweetener, heavy cream, and vanilla extract in a small bowl. Add water a half tablespoon at a time until it's thin enough to drizzle beautifully.
  • Once cooled, carefully remove the cake using your parchment sling. Drizzle the icing generously over the top. Slice into 12 squares and get ready to enjoy a fantastic, healthy treat!
