Keto Coffee Creamer

  • 1 1/2 cups heavy whipping cream (or full-fat coconut milk for a dairy-free option)
  • 1/3 cup allulose
  • 1/3 cup Swerve Confectioners (or another powdered erythritol blend)
  • 1/2 vanilla bean split (optional, for an authentic vanilla flavor)
  • 1/3 cup unflavored collagen protein powder
  • 3/4 cup unsweetened hemp milk or almond milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Gently Simmer Cream: In a medium saucepan, combine the heavy cream and your chosen sweeteners (allulose and Swerve). Heat this mixture over medium heat until it just begins to simmer around the edges. Reduce the heat to medium-low and let it gently simmer for 15 minutes to help it thicken slightly. Afterwards, remove the pan from the heat.
  • Infuse Vanilla (Optional): If you're using a vanilla bean, carefully slice it open lengthwise and scrape out the tiny seeds. Add both the seeds and the empty pod to the warm cream mixture. Cover the saucepan and let it steep for 20 minutes to infuse a rich vanilla flavor. Then, remove and discard the vanilla pod.
  • Whisk in Remaining Ingredients: Whisk the collagen protein powder, hemp or almond milk, and vanilla extract into the cream mixture until everything is smooth and well combined. Give it a taste test and stir in a bit more sweetener if you prefer it sweeter.
  • Cool & Store: Allow the creamer to cool down completely to room temperature. Once cool, carefully pour it into a clean glass jar. Store this delicious creamer in your refrigerator for up to one week. Remember to give it a good shake before adding it to your coffee each morning!
