Mix the Dry Stuff: In a medium bowl, simply whisk together the almond flour, oat fiber, baking powder, and salt. Set this aside for a moment.
Whip the Wet Stuff: Grab a separate large bowl and combine the eggs, sour cream, Swerve Confectioners, heavy cream, orange zest, vanilla extract, and orange extract (if you're using it). Whisk everything together until it's smooth and perfectly blended.
Combine Gently: Slowly add the dry ingredient mixture into the wet ingredients. Mix just until everything is combined β try not to overmix to keep the bread light and fluffy!
Add the Berries: Gently fold in the fresh cranberries. Their tartness will be a delicious contrast!
Bake Beautifully: Pour the batter evenly into your prepared loaf pan. Pop it into the oven and bake for 40-45 minutes. You'll know it's ready when a toothpick inserted into the center comes out clean. (Mine was perfect at 45 minutes!)
Cool & Glaze: Let your lovely loaf cool completely in the pan on a wire rack. While it's cooling, quickly make the glaze: whisk together the Swerve Confectioners, fresh orange juice, and heavy cream until itβs smooth and pourable.
