Ingredients
  

For the Bread

  • 1 3/4 cups super fine almond flour
  • 1/4 cup oat fiber great for texture, with zero net carbs!
  • 2 cups fresh cranberries
  • 3 large eggs
  • 1/2 cup full-fat sour cream
  • 1/4 cup heavy cream
  • 2/3 cup Swerve Confectioners or your preferred powdered keto sweetener
  • 2 teaspoons baking powder
  • 1 tablespoon fresh orange zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract optional, you can use more zest instead
  • Pinch of salt

For the Glaze

  • 1/4 cup Swerve Confectioners or your preferred powdered keto sweetener
  • 1 tablespoon fresh orange juice
  • 1-2 teaspoons heavy cream adjust for your desired consistency

Instructions
 

  • Get Ready: Preheat your oven to a cozy 325Β°F (160Β°C). Lightly spray a standard loaf pan with a bit of nonstick spray.
  • Mix the Dry Stuff: In a medium bowl, simply whisk together the almond flour, oat fiber, baking powder, and salt. Set this aside for a moment.
  • Whip the Wet Stuff: Grab a separate large bowl and combine the eggs, sour cream, Swerve Confectioners, heavy cream, orange zest, vanilla extract, and orange extract (if you're using it). Whisk everything together until it's smooth and perfectly blended.
  • Combine Gently: Slowly add the dry ingredient mixture into the wet ingredients. Mix just until everything is combined – try not to overmix to keep the bread light and fluffy!
  • Add the Berries: Gently fold in the fresh cranberries. Their tartness will be a delicious contrast!
  • Bake Beautifully: Pour the batter evenly into your prepared loaf pan. Pop it into the oven and bake for 40-45 minutes. You'll know it's ready when a toothpick inserted into the center comes out clean. (Mine was perfect at 45 minutes!)
  • Cool & Glaze: Let your lovely loaf cool completely in the pan on a wire rack. While it's cooling, quickly make the glaze: whisk together the Swerve Confectioners, fresh orange juice, and heavy cream until it’s smooth and pourable.
  • Enjoy: Drizzle that delightful orange glaze all over the cooled bread before slicing and serving! Store any leftovers in an airtight container in the fridge for a few days, or pop them in the freezer for a treat later.
