  • 4 ounces salted butter softened (which is 8 tablespoons or 1 stick)
  • 1/2 cup low-carb powdered sweetener (like an erythritol/stevia blend or Swerve Confectioners)
  • 2 teaspoons vanilla extract
  • Stevia glycerite or liquid stevia drops to taste (optional, for extra sweetness)

Instructions
 

  • Grab a medium mixing bowl and use a hand mixer to beat the cool, softened cream cheese until it's wonderfully smooth and creamy.
  • Now, add your chosen low-carb powdered sweetener to the bowl. Beat again until the mixture becomes visibly lighter and takes on a fluffy texture.
  • Stir in the vanilla extract, ensuring it's fully incorporated into the frosting.
  • Introduce the softened butter to the mix. Continue beating until all the ingredients are beautifully whipped together, making the frosting airy and delightful.
  • Give it a taste! If you prefer it sweeter, feel free to add a little more powdered sweetener or a few drops of liquid stevia, then beat briefly to blend.
  • Pop the frosting into the refrigerator to chill until you're ready to use it.
  • Just before you're about to frost your favorite low-carb treats, give the frosting one last quick beat to bring back its light and fluffy consistency.
