Ingredients
  

  • 0.5 lb bulk hot Italian sausage (226.8g, or any sugar-free sausage you prefer)
  • 8 large eggs
  • 0.25 cup heavy whipping cream (59.5g, or coconut cream for a dairy-free option)
  • 0.5 cup shredded Cheddar or Monterey Jack cheese (56.5g)
  • 2 medium green onions sliced (white and light green parts only)
  • 0.75 tsp salt
  • 0.5 tsp pepper

Instructions
 

  • Sauté the Sausage: In a medium skillet, cook your chosen sausage over medium heat until it's fully cooked and no longer pink, typically taking about 7 to 8 minutes. As it cooks, gently break up any large clumps with a spoon. Once done, transfer it to a plate and let it cool slightly – this step really builds flavor!
  • Whip Up the Egg Mixture: Preheat your oven to 375°F (190°C). For easy cleanup, line a 12-cup muffin tin with parchment or silicone liners. In a large bowl, whisk the 8 large eggs and heavy whipping cream together until they're well combined and light.
  • Combine & Fill: Now, gently fold the cooled sausage, shredded cheese, sliced green onions, salt, and pepper into the whisked egg mixture. Stir until everything is nicely and evenly distributed. Carefully spoon this wholesome mixture into each of your prepared muffin cups, filling them almost to the top.
  • Bake to Golden Perfection: Place the muffin tin into your preheated oven and bake for 25 to 30 minutes. You’ll know they’re ready when they’re beautifully puffed up and golden brown. Let them cool in the tin for at least 10 minutes before serving.
