  • 1/3 cup powdered erythritol sweetener
  • 3 tablespoons granular allulose (or xylitol)
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 5 ounces unsweetened chocolate, finely chopped (100% cacao recommended)
  • 1/3 cup collagen peptides (unflavored, optional for chewiness and protein)
  • 2 tablespoons unsweetened cocoa powder (Dutched cocoa for deeper flavor)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

  • Prepare Your Pan: Start by lining a standard 9x5 inch loaf pan with parchment paper. This simple step makes it super easy to lift out your delicious fudge later!
  • Simmer Your Base: In a medium saucepan, combine the heavy cream (or coconut milk), powdered sweetener, allulose, and butter (or coconut oil). Heat this mixture over medium heat until it reaches a gentle simmer. Then, reduce the heat and let it simmer for about 20-30 minutes, stirring occasionally, until the mixture noticeably thickens and reduces by approximately one-third. This creates a rich, condensed base for your fudge.
  • Melt in the Chocolate: Remove the saucepan from the heat. Add your finely chopped unsweetened chocolate to the hot cream mixture. Let it sit for about 5 minutes to soften, then whisk until it's completely smooth and wonderfully glossy.
  • Fold in Flavor & Goodness: Now, whisk in the collagen peptides (if you're adding them for that extra chewy texture and a healthy protein boost!), cocoa powder, vanilla extract, and salt until everything is beautifully blended and smooth.
