Equipment

  • Medium Saucepan
  • Whisk

Ingredients

  • 1/2 cup heavy whipping cream
  • 1/4 cup water
  • 1/2 cup allulose sweetener
  • 2 tablespoons butter
  • 3 ounces unsweetened chocolate finely chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon espresso powder optional, enhances chocolate flavor
  • Pinch salt

Instructions

  • In a medium saucepan, gently combine the heavy cream, water, allulose sweetener, and butter. Place the saucepan over medium heat.
  • Warm the mixture to a gentle simmer, whisking continuously until the sweetener is fully dissolved. Continue to simmer and whisk frequently for 5 minutes, making sure it does not come to a full boil.
  • Carefully remove the pan from the heat. Stir in the finely chopped unsweetened chocolate, vanilla extract, optional espresso powder, and a pinch of salt. Let it rest for 3 minutes to allow the chocolate to melt completely, then whisk until the sauce is wonderfully smooth and glossy.
