First, get your mini waffle maker nice and hot and ready to go.
In a small mixing bowl, gently whisk your egg until it's slightly beaten. Then, add in the almond flour, 1/2 cup of cheddar cheese, cream cheese, diced jalapeño, crumbled bacon, and a pinch of garlic powder. Stir everything together thoroughly until the batter is well combined and smooth.
Sprinkle a small amount of the extra shredded cheddar cheese directly onto the hot waffle maker plates. Carefully pour half of your prepared chaffle batter over the cheese, then add another little sprinkle of cheese on top of the batter.
Close the lid of your waffle maker and let it cook for about 3 to 5 minutes, or until it’s beautifully golden brown and crispy. (Your waffle maker might have a light or timer to indicate when it’s done!). Repeat this exact process for the second chaffle.
Serve your crispy, savory chaffles immediately! They are fantastic on their own, or you can spread a little extra cream cheese on top for an even creamier, delightful bite.
