Ingredients
  

  • 1 Tablespoon unsalted butter melted
  • 1 Tablespoon coconut flour OR 3 Tablespoons almond flour
  • 2 Tablespoons granulated sugar-free sweetener
  • 1 Tablespoon unsweetened cocoa powder (for Chocolate version only)
  • 1 Tablespoon sugar-free peanut butter (for Peanut Butter version only)
  • 0.5 teaspoon baking powder
  • 1 large egg lightly beaten
  • pure vanilla extract A splash
  • 1 Tablespoon sugar-free chocolate chips (optional, for topping or mixing in)

Instructions
 

  • Grab a microwave-safe coffee mug. Melt the butter in the microwave for just about 10 seconds until it's liquid. If you're making the peanut butter version, you can swirl the melted butter around the inside of the mug.
  • Add your chosen flour (coconut or almond), sugar-free sweetener, baking powder, vanilla extract, and the lightly beaten egg to the mug.
  • Choose Your Flavor:
    • For Chocolate: Stir in the cocoa powder now.
    • For Peanut Butter: Add the sugar-free peanut butter and mix it in thoroughly with the other ingredients.
    • For Vanilla: No extra step here, just make sure everything else is well combined!
  • Using a fork or small whisk, mix all the ingredients in the mug until a smooth batter forms and there are no dry spots.
  • Microwave your mug cake on high power for 60 seconds. The most important tip here is not to overcook it, or your cake will be dry!
  • Carefully remove the hot mug. If desired, sprinkle with sugar-free chocolate chips or add your favorite keto-friendly toppings like whipped cream. Dig in immediately for a warm, delightful treat!
