  • 2.5 pounds boneless, skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/2 cup Dijon mustard
  • 2 tablespoons keto-friendly sweetener (like erythritol or monk fruit blend)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple extract (optional, for a hint of sweetness)
  • 1 tablespoon fresh rosemary chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly coat a casserole dish with cooking spray for easy cleanup.
  • Arrange the boneless, skinless chicken thighs evenly in the prepared dish. Sprinkle them with the salt.
  • In a separate bowl, whisk together the Dijon mustard, keto-friendly sweetener, apple cider vinegar, maple extract (if using), and fresh rosemary until well combined.
  • Pour the flavorful mustard sauce generously over the chicken thighs, ensuring they are well coated. Place the dish in the preheated oven and bake for 40 minutes.
  • Gently remove the dish from the oven. Spoon some of the delicious sauce over the chicken (this is called basting!) to keep it moist and infuse more flavor. Return to the oven and bake for an additional 20 minutes.
  • The chicken should be wonderfully tender, and the sauce perfectly thickened after about an hour of total baking. Dark meat chicken is forgiving, so don't fret about overcooking – it just gets more succulent!
