Ingredients
  

  • 2 ounces Cream Cheese softened
  • 2 Large Eggs room temperature
  • 2 tablespoons Coconut Flour OR 4 tablespoons Almond Flour
  • 1 teaspoon sugar-free granulated sweetener
  • 0.5 teaspoon Baking powder
  • salt Pinch of
  • 0.5 teaspoon Vanilla extract
  • 1 teaspoon Lemon Zest optional

Instructions
 

  • Warm up a non-stick pan or griddle over medium heat. Lightly spray it with cooking spray or melt a tiny pat of butter or coconut oil in the pan.
  • Pop all your ingredients into a blender. Blend until everything is smoothly combined – no lumps allowed! This makes cleanup super easy.
  • Pour the batter into the heated pan to create pancakes, aiming for about 4 inches across. You might need to cook them in batches.
  • Let each pancake cook for a few minutes on both sides until they're nicely browned. Carefully remove them from the pan and place them on a plate.
  • Serve your delicious keto pancakes hot with a dollop of butter and sugar-free syrup, if you wish!
