Ingredients
  

  • 1.5 cups raw almonds
  • 1.25 cups raw pecans
  • 1 cup unsweetened shredded coconut or almond flour for a finer texture
  • 0.5 cup raw pumpkin seeds
  • 0.33 cup granulated erythritol-based sweetener
  • 0.33 cup vanilla whey protein powder or egg white protein powder for dairy-free
  • 0.33 cup natural peanut butter sugar-free is best!
  • 0.25 cup unsalted butter or coconut oil for a dairy-free option
  • 0.25 cup water

Instructions
 

  • Get Ready: Preheat your oven to 300°F (150°C) and line a big baking sheet with parchment paper. This makes cleanup a breeze!
  • Chop the Nuts: In a food processor, pulse the almonds, pecans, shredded coconut, and pumpkin seeds until they're mostly coarse crumbs with a few bigger bits for satisfying crunch. Transfer this mix to a large bowl, then stir in your sweetener and protein powder until everything is well combined.
  • Melt & Mix: In a microwave-safe bowl, gently melt the peanut butter and butter (or coconut oil) together until smooth and creamy. Pour this warm, gooey mixture over your dry ingredients. Give it a good stir, tossing lightly, until it’s all coated. Now, add the water and mix again; you'll notice it starts to come together in clumps!
  • Bake to Perfection: Spread the yummy mixture evenly on your prepared baking sheet. Use your hands to press it down firmly – this helps it become deliciously crunchy. Bake for 30 minutes, but don't forget to stir it halfway through and press it down again to ensure even crispiness.
  • Cool & Crunch: Once baked, take it out of the oven and let it cool completely on the baking sheet. This is crucial for it to get super crunchy!
  • Break it Up: Once cool, simply break up any big clumps with your hands into perfect granola pieces. Enjoy your healthy, homemade granola straight from the oven or store it for later!
