Easy Keto Peppermint Bark

Ingredients
  

  • 7 ounces sugar-free white chocolate chips
  • 7 ounces sugar-free semi-sweet chocolate chips
  • 1/4 to 1/2 teaspoon peppermint extract
  • 7 sugar-free peppermint candies chopped

Instructions
 

  • First, gently melt your semi-sweet chocolate chips. Place them in a microwave-safe bowl and heat for 30 seconds. Remove, give them a good stir, then continue heating in 10-second bursts, stirring after each, until they are perfectly smooth and melted.
  • Next, line a small baking sheet with parchment paper or a silicone mat. Pour the melted semi-sweet chocolate onto it and spread it into an even, thin layer using an offset spatula. Pop it into the fridge for a few minutes to set while you prepare the white chocolate.
  • Now, repeat the melting process with your sugar-free white chocolate chips in a separate microwave-safe bowl until fully melted and smooth.
  • Stir the peppermint extract into the melted white chocolate. Let it cool down a bit at room temperature; you want it liquid enough to pour but not so hot that it melts the chocolate underneath.
  • Carefully pour the peppermint white chocolate over the set semi-sweet chocolate layer, spreading it out evenly.
  • Generously sprinkle the chopped sugar-free peppermint candies over the top.
  • Place the baking sheet back into the fridge. Let the bark chill completely until it's firm, which usually takes about 10-15 minutes. Once solid, break it into delicious, serving-size pieces. Enjoy your healthy, festive treat!
