Dough

  • 0.5 cup coconut flour
  • 0.5 cup almond flour
  • 5 tablespoons psyllium husk powder about 1.6 ounces
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1.5 cups egg whites from about 8 large eggs
  • 3 tablespoons oil or melted butter
  • 2 tablespoons apple cider vinegar
  • 0.75 cup hot water

Filling

  • 3 tablespoons tomato paste
  • 0.5 cup water
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 3 ounces chopped pepperoni
  • 4 ounces shredded mozzarella cheese
  • 1 ounce grated Parmesan cheese

Instructions
 

  • Get Your Oven Ready: Start by preheating your oven to 350°F (175°C). Grab a large baking sheet and line it with parchment paper for easy cleanup.
  • Mix Dry Dough: In a big mixing bowl, combine the coconut flour, almond flour, psyllium husk powder, baking powder, and salt. Whisk them together until they're well blended.
  • Add Wet Ingredients: Stir the egg whites, oil (or melted butter), and apple cider vinegar into the dry mix. Then, slowly pour in the hot water while continuing to stir. Watch as your dough comes together and starts to thicken!
  • Roll Out the Dough: Place your dough onto a silicone mat or a piece of lightly greased parchment paper. Gently pat it down into a rough rectangle. Cover it with another piece of parchment paper and use a rolling pin to roll it into a large, thin 12 by 15-inch rectangle.
  • Prepare the Pizza Sauce: In a small bowl, quickly whisk together the tomato paste, 1/2 cup water, salt, pepper, and garlic powder. This is your simple, flavorful sauce!
  • Layer the Goodness: Spread the homemade pizza sauce evenly over your rolled-out dough, making sure to leave about a 1-inch border all around the edges. Next, sprinkle the chopped pepperoni, shredded mozzarella, and grated Parmesan cheese over the sauce, again keeping that 1-inch border clear.
  • Roll It Up Tight: Starting from one of the long ends, carefully and snugly roll up the dough. Use the silicone mat or greased paper underneath to help you keep it tight. Once rolled, gently pinch the seam to seal it closed.
  • Slice and Arrange: With a sharp knife, cut the log into 15 or 16 even slices. Don't worry if they look a little squashed; you can gently reshape them with your fingers. Lay these yummy rolls onto your prepared baking sheet.
  • Bake to Perfection: Pop the baking sheet into your preheated oven and bake for 32 to 40 minutes. You're looking for them to be nicely puffed up and set, with the cheese slightly golden. Bake as long as you can without letting the cheese or sauce burn (they might slightly deflate as they cool, which is normal!).
