  • 0.5 cup shredded mozzarella cheese
  • 1 large egg beaten
  • 1.5 tablespoons pumpkin purée
  • 0.5 teaspoon Swerve confectioners (or your preferred keto-friendly powdered sweetener)
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon pumpkin pie spice
  • 0.125 teaspoon pure maple extract optional, but enhances flavor!
  • cooking spray (like coconut oil spray) for your waffle maker

Toppings (Optional)

  • roasted pecans
  • ground cinnamon a sprinkle
  • sugar-free maple syrup
  • whipped cream a dollop

Instructions
 

  • Warm Up Your Waffle Maker: Get your mini waffle maker (around 4-inch size is ideal) preheated and ready to go.
  • Whisk the Batter: In a mixing bowl, combine the beaten egg, pumpkin purée, Swerve confectioners, vanilla extract, pumpkin pie spice, and optional maple extract. Whisk everything together until it's smooth.
  • Add the Cheese: Gently fold in the shredded mozzarella cheese until it's evenly distributed throughout the pumpkin mixture.
  • Cook Your Chaffles: Lightly spray your hot waffle maker plates with nonstick cooking spray (like coconut oil). Pour about half of the batter into the center of the waffle maker.
  • Crisp to Perfection: Close the lid and cook for 4 to 6 minutes. The exact time depends on how crispy you prefer your chaffles. Golden brown and firm is a good indicator.
  • Second Chaffle & Serve: Carefully remove the first chaffle and repeat with the remaining batter. Serve your warm pumpkin chaffles immediately with any healthy toppings you love, such as a drizzle of sugar-free maple syrup, a sprinkle of cinnamon, or some crunchy roasted pecans.
