Ingredients

  • 28 ounces sweetened condensed milk about two 14-ounce cans
  • 1/2 cup light sour cream
  • 3/4 cup fresh key lime juice
  • Lime Zest from 2 regular limes (or 4 key limes), plus extra for garnish

For the Fluffy Whipped Cream Topping

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • For the Crispy Graham Cracker Crust:

  • Preheat your oven to a cozy 375°F (190°C).
  • In a small bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix them together until everything is moist and well-combined.
  • Firmly press this crumb mixture into the bottom and up the sides of an 8 to 9.5-inch pie pan. Pop it into the preheated oven and bake for just 7 minutes until lightly golden.
  • Remove the crust from the oven and let it cool completely for at least 30 minutes. This helps ensure a perfectly crisp base!
  • For the Zesty Key Lime Filling:

  • Reduce your oven temperature to 350°F (175°C).
  • In a medium bowl, simply whisk together the sweetened condensed milk, light sour cream (a healthier choice!), key lime juice, and fresh lime zest until perfectly smooth and creamy.
  • Pour this vibrant, zesty filling into your cooled graham cracker crust. Bake for just 10 minutes – the edges should be set, but the center might still have a slight jiggle.
  • Let the pie cool down a bit on the counter, then transfer it to the refrigerator to chill for at least 3 hours. For the best firm texture and refreshing taste, overnight chilling is ideal!
  • For the Fluffy Whipped Cream Topping:

  • In a mixer, beat the heavy whipping cream and powdered sugar on high speed until lovely stiff peaks form.
  • Gently beat in the vanilla extract for a hint of sweetness.
  • Once your pie is thoroughly chilled, generously spread or pipe the homemade whipped cream over the top. For an extra touch of beauty and fresh flavor, sprinkle with a little more fresh lime zest.
