Easy Labor Day Peach Bruschetta

Ingredients
  

Baguette

  • 1 large baguette cut into 3/4-inch slices

Topping Mixture

  • 3 large peaches chopped
  • 1 cup cherry tomatoes quartered
  • 2 tbsp fresh basil chopped
  • 1 tbsp extra-virgin olive oil
  • to taste Kosher salt

Ricotta Spread

  • 1 cup whole-milk ricotta
  • 1 tsp lemon zest finely grated
  • to taste freshly ground black pepper
  • hot honey for drizzling

Instructions
 

  • Preheat your oven to 350°F. Arrange the baguette slices in a single layer on a baking sheet. Bake for 15 minutes, flipping halfway through, until lightly golden and crisp.
  • While the bread toasts, combine the chopped peaches, quartered cherry tomatoes, basil, and olive oil in a large bowl. Season with a pinch of salt and toss gently.
  • In a small bowl, mix the ricotta with the lemon zest. Add a little salt and pepper to taste.
  • Spread a thin layer of the ricotta mixture onto each toasted baguette slice. Top with the peach-tomato mixture and finish with a drizzle of hot honey.
