  • 1 cup granulated sugar
  • 1 whole lemon zest from 1 whole lemon
  • 3.4 ounces instant lemon pudding mix one small box
  • 1 cup mayonnaise
  • 2 large eggs
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk

For the Glaze

  • 1.5 cups powdered sugar
  • 3 tablespoons fresh lemon juice

Instructions
 

  • Get Ready to Bake: Preheat your oven to 350°F (175°C). Lightly grease and flour a bundt pan, or use baking spray for an easy release.
  • Infuse the Sugar: In a large mixing bowl, combine the granulated sugar and lemon zest. Gently rub them together with your fingers for about 30 seconds until the sugar smells wonderfully lemony. This easy step really brightens the flavor!
  • Mix the Wet Goodness: Add the instant lemon pudding mix and mayonnaise to the lemon-infused sugar. Beat them together on low speed until well combined and smooth.
  • Add the Eggs: Beat in the eggs one at a time, scraping down the sides of the bowl as needed until everything is smoothly incorporated.
  • Fold in Dry Ingredients: Slowly add the flour, baking powder, and salt to the bowl. Mix on low speed just until they are combined – be careful not to overmix!
  • Stir in Milk: Gently pour in the milk and mix on low speed until it's fully incorporated into the batter. Your cake batter is now ready!
  • Bake to Perfection: Pour the smooth batter evenly into your prepared bundt pan. Bake for 42-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
