Ingredients
  

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons fresh lemon zest
  • 1.5 cups cooled lemon simple syrup prepared above
  • 1 cup additional water
  • 0.5 cup freshly squeezed lemon juice

Instructions
 

  • In a small saucepan, combine the granulated sugar, 1 cup of water, and fresh lemon zest. Gently heat the mixture over medium heat, stirring continuously until all the sugar is completely dissolved. Once dissolved, remove the pan from the heat and allow the syrup to cool down entirely.
  • Once your lemon simple syrup has cooled, combine it in a large bowl with the additional 1 cup of water and the freshly squeezed lemon juice. Whisk everything together until it's well blended.
  • Pour the mixture into a shallow, freezer-safe container with a lid. Cover the surface of the liquid directly with plastic wrap, then secure the lid. Place the container in the freezer for 4 to 6 hours. To achieve the best, creamiest texture, stir or whisk the mixture every 30 minutes during the freezing process, making sure to break up any forming ice crystals.
  • Once the sorbet has reached a firm yet scoopable consistency, it's ready to serve! Garnish each serving with a fresh lemon slice and a sprig of mint for a delightful touch.

Notes

For an extra smooth sorbet, you can strain the zest out after cooling, though this might slightly reduce the intense lemon flavor. For an even smoother and quicker freeze, you can churn the mixed liquid in an ice cream maker following the manufacturer's instructions before transferring it to a container to firm up in the freezer.
