Ingredients
  

  • 1 lb ground beef
  • 3 medium potatoes peeled and diced
  • 1 small onion diced
  • 1 tablespoon minced garlic
  • 1/2 cup canned diced tomatoes
  • 3/4 cup tomato sauce
  • 1/2 cup beef broth (or chicken broth)
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro chopped (for garnish)

Instructions
 

  • Brown your ground beef and diced onions in a large skillet over medium heat, breaking up the beef as it cooks until it's no longer pink and the onions are soft. Drain any excess fat for a healthier meal.
  • Stir in the minced garlic and cook for just a minute until you can smell its lovely aroma.
  • Now, add the diced potatoes, canned diced tomatoes, tomato sauce, beef broth, cumin, oregano, paprika, salt, and black pepper. Give it a good stir to combine everything.
  • Bring the mixture to a gentle simmer, then lower the heat, cover the skillet, and let it cook for 20-25 minutes. Remember to stir occasionally until the potatoes are nice and tender, and the sauce has thickened beautifully.
  • Taste and adjust any seasonings if needed. Garnish with fresh chopped cilantro for a burst of flavor and serve up this hearty, wholesome dish!
