Preheat your oven to 400°F (200°C) and lightly spray a 9x13 inch baking dish with cooking spray.
In a large skillet, heat your chosen oil over medium heat. Add the ground beef (or turkey) and cook, breaking it up with a spoon, until it's fully browned, which usually takes about 8 minutes. Drain any extra grease.
Stir in the taco seasoning and the jarred salsa with the cooked meat. Give it a good mix, then remove the skillet from the heat.
Arrange 5 tortillas in a single layer at the bottom of your prepared baking dish. Spoon one-third of the flavorful meat mixture evenly over the tortillas, then sprinkle with one-third of the shredded Colby Jack cheese.
Repeat the layering process two more times to create three delicious layers of tortillas, meat, and cheese.
Place the uncovered dish in your preheated oven and bake for 20 minutes. The lasagna is ready when the cheese is bubbly and beautifully golden brown around the edges.
Carefully remove from the oven, let it cool slightly, then cut into 8 generous servings. Top with your favorite healthy additions like a dollop of sour cream, fresh diced tomatoes, or vibrant green onions!
