Ingredients
  

Lasagna Layers

  • 1 tablespoon avocado or olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 packet taco seasoning
  • 15 ounces jarred salsa
  • 15 small flour tortillas street taco size
  • 4 cups shredded Colby Jack cheese

Optional Toppings

  • sour cream
  • diced tomatoes
  • sliced green onions
  • guacamole

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly spray a 9x13 inch baking dish with cooking spray.
  • In a large skillet, heat your chosen oil over medium heat. Add the ground beef (or turkey) and cook, breaking it up with a spoon, until it's fully browned, which usually takes about 8 minutes. Drain any extra grease.
  • Stir in the taco seasoning and the jarred salsa with the cooked meat. Give it a good mix, then remove the skillet from the heat.
  • Arrange 5 tortillas in a single layer at the bottom of your prepared baking dish. Spoon one-third of the flavorful meat mixture evenly over the tortillas, then sprinkle with one-third of the shredded Colby Jack cheese.
  • Repeat the layering process two more times to create three delicious layers of tortillas, meat, and cheese.
  • Place the uncovered dish in your preheated oven and bake for 20 minutes. The lasagna is ready when the cheese is bubbly and beautifully golden brown around the edges.
  • Carefully remove from the oven, let it cool slightly, then cut into 8 generous servings. Top with your favorite healthy additions like a dollop of sour cream, fresh diced tomatoes, or vibrant green onions!

Notes
