Equipment

  • Mini Muffin Tins
  • 2.5-inch Round Cookie Cutter
  • Small Offset Spatula or Butter Knife
  • Small Re-sealable Baggie

Ingredients

  • 1 package refrigerated pie crusts (14.1-ounce, 2 crusts)
  • 1 box brownie mix (18.3-ounce), plus ingredients as directed on package (e.g., eggs, oil, water)
  • 1 container vanilla frosting (16-ounce), or homemade

Instructions

  • Preheat your oven to 350°F (175°C). Unroll one pie crust. Use a 2.5-inch round cookie cutter to cut out circles. Gently re-roll any scraps to cut more circles until you've used up most of the dough.
  • Lightly spray mini muffin tins with cooking spray. Carefully press one pie crust circle into each mini muffin cavity. Repeat with the second pie crust. You should get about 36 mini crusts. Pop them in the fridge to chill while you make the brownie batter.
  • Prepare your brownie mix according to the package instructions.
  • Take the chilled crusts from the fridge and fill each mini pie crust with about 1 tablespoon of brownie batter. (You'll likely have some brownie batter left over – feel free to bake it separately as a mini brownie or a loaf for a chef's treat!) Bake for about 15 minutes, or until the crusts are golden brown.
  • Let the mini pies cool completely in the muffin tins. Once cool, gently remove them using a small offset spatula or butter knife. Spoon your vanilla frosting into a small re-sealable baggie, snip a tiny corner off, and pipe little football "laces" onto each brownie pie. Enjoy these festive treats!
