Prep Your Smoker & Ribs: Begin by preheating your pellet smoker to 225°F (107°C) according to its specific startup instructions. While it heats, prepare your ribs. Gently remove the thin silver skin membrane from the bone-side of each rack; a paper towel can help with grip.
Season Generously: Lay the ribs on a baking sheet. Evenly sprinkle about 2-3 tablespoons of your chosen BBQ rib rub on each side of the ribs. Don't completely cover them; let some meat show through for that perfect bark.
Smoke Them Low & Slow: Once your smoker reaches 225°F, carefully place the seasoned ribs directly onto the grates. Close the lid and let them smoke undisturbed for at least 4 hours. Minimizing opening the smoker will help maintain a consistent temperature and shorten cooking time.
Monitor & Finish: Baby back ribs typically take 4-5 hours, while spare ribs need 6-7 hours. To check for doneness, perform the "bend test": use tongs to pick up the ribs in the middle. If the bark starts to crack and the ribs almost split in half, they're ready. If not, continue smoking.
Optional BBQ Sauce Glaze: For an extra layer of flavor, brush a thin layer of your favorite BBQ sauce on both sides of the ribs once they've passed the bend test. Return them to the smoker at 225°F for another 30 minutes to allow the sauce to caramelize beautifully.
Serve: Transfer the cooked ribs to a cutting board and slice them between the bones with a sharp knife. Serve immediately with your favorite healthy sides!
