Ingredients
  

  • 1 large head cauliflower cut into small, bite-sized florets (about 3/4 to 1 inch)
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning (optional, but highly recommended!)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 ounces pepperoni slices

Instructions
 

  • Preheat your oven to 425°F (218°C). In a 9x13 inch casserole dish, toss the cauliflower florets with olive oil, Italian seasoning (if you're using it), sea salt, and black pepper. Make sure all the florets are nicely coated, then spread them out in an even layer.
  • Place the dish in the preheated oven and roast for about 25 minutes. Remember to give the cauliflower a good stir halfway through so it cooks evenly and gets beautifully tender and slightly golden. Keep that oven on for the next step!
  • Once your cauliflower is roasted, carefully pour the marinara sauce evenly over it, making sure every piece is covered. Next, sprinkle a generous amount of shredded mozzarella cheese across the top, followed by an even layer of pepperoni slices.
  • Return the casserole to the oven for another 10-15 minutes, or until the cheese is wonderfully melted, bubbly, and has a lovely golden hue. Let it cool for a few minutes before serving to let the flavors settle.
