Get your oven ready! Preheat it to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Carefully slice the pumpkin in half vertically. Use a spoon to scoop out all the seeds and stringy bits from the inside. Then, cut the pumpkin flesh into lovely 1-inch thick wedges.
Arrange the pumpkin wedges in a single layer on your prepared baking sheet. Lightly brush them with olive oil, then sprinkle generously with salt and pepper.
