Ingredients
  

  • 1 small pumpkin about 2 pounds
  • olive oil A drizzle
  • salt and freshly ground black pepper to taste

Instructions
 

  • Get your oven ready! Preheat it to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Carefully slice the pumpkin in half vertically. Use a spoon to scoop out all the seeds and stringy bits from the inside. Then, cut the pumpkin flesh into lovely 1-inch thick wedges.
  • Arrange the pumpkin wedges in a single layer on your prepared baking sheet. Lightly brush them with olive oil, then sprinkle generously with salt and pepper.
  • Pop them in the oven and bake for about 20-25 minutes, or until the pumpkin is beautifully tender and can be easily pierced with a fork. Enjoy this simple and delicious side!
