In a bowl, mix pancake mix and water until just combined, leaving some lumps.
Melt half the butter in a large nonstick skillet over medium heat.
Dip half the sausage patties in the batter, coating them evenly, and place them in the skillet. Cook for 2 to 3 minutes until lightly browned and puffed. Flip and cook for another 2 to 3 minutes until fully cooked.
Repeat with the remaining batter and sausage. Serve with syrup for dipping if desired.
