Ingredients
  

  • 4 slices bacon
  • 2 large boneless, skinless chicken breasts (or 4 chicken cutlets)
  • Salt to taste
  • freshly ground black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon ranch seasoning mix (low-sodium recommended)
  • 1 green onion thinly sliced (for garnish)

Instructions
 

  • In a large skillet, cook the bacon over medium-high heat until it's wonderfully crisp. Remove the cooked bacon, crumble it, and set it aside, leaving the flavorful bacon grease in the skillet.
  • If using large chicken breasts, carefully slice them in half horizontally to create four thinner cutlets. Season both sides of the chicken with a sprinkle of salt and pepper.
  • Heat the reserved bacon grease in the skillet over medium-high heat. Add the chicken cutlets and cook for 2 to 3 minutes per side, until they are golden brown and just cooked through.
  • Generously sprinkle the ranch seasoning over the chicken, turning to coat each piece evenly. Then, top the chicken with the shredded mozzarella cheese.
  • Cover the skillet with a lid for 2-3 minutes, allowing the cheese to melt into a bubbly, gooey layer.
  • Finally, sprinkle the crumbled bacon and fresh green onion over the cheesy chicken. Serve immediately and savor this tender, flavorful meal!
