Equipment

  • Skillet

Ingredients

  • 1 tablespoon unsalted butter
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2.5 cups water
  • 1 (12-ounce) can evaporated milk for a creamy, lighter sauce
  • 2 (5.6-ounce) packages Knorr Chicken Flavor Rice Sides

Instructions

  • In a large skillet over medium heat, melt the butter. Add your diced chicken breast pieces, sprinkle with salt and pepper, and cook until they're lightly golden brown. This quick sear helps lock in their flavor!
  • Pour the water into the skillet, gently scraping up any delicious browned bits from the bottom of the pan – that's extra flavor you don't want to miss! Stir in the evaporated milk, a smart choice for creamy texture with less fat than heavy cream.
  • Empty the contents of both Knorr Chicken Flavor Rice Side packages into the skillet. Stir everything together well. Increase the heat slightly to bring the mixture to a gentle boil, stirring frequently to prevent anything from sticking.
  • Reduce the heat to low, place a lid on the skillet, and let it simmer for about 7-10 minutes, or until the rice is perfectly tender and has absorbed most of the liquid.
  • Remove the skillet from the heat and take off the lid. Let the chicken and rice sit for a few minutes; this allows the creamy sauce to thicken up beautifully. Serve hot and enjoy your wholesome, easy meal!
