Ingredients
  

  • 1 lb boneless chicken breasts cut in half
  • 16 oz Vigo Yellow Spanish Rice bag
  • 1 packet ranch dressing mix or seasoning from the rice bag
  • 3 cups water
  • 1/2 cup salsa

Instructions
 

  • Combine Everything: Simply place the chicken pieces, yellow Spanish rice, ranch dressing mix (or rice seasoning), water, and salsa into your Instant Pot. Give it a gentle stir to mix it all together.
  • Pressure Cook: Secure the lid and make sure the vent is set to seal. Set your Instant Pot to cook on High Pressure for 4 minutes.
  • Natural Release & Serve: Once cooking is done, allow the pressure to release naturally. This usually takes about 25 minutes, wait until the valve drops down. Carefully open the lid.
  • Shred & Mix: Take out the chicken and easily shred or chop it. Return the shredded chicken to the pot and stir it into the flavorful rice. Serve this delicious meal as is, or with your favorite toppings like a sprinkle of cheese, extra salsa, or fresh avocado slices for added goodness!
