Delightful strawberry sandwich cookies made with a convenient cake mix base and a luscious strawberry cream cheese filling. A perfect treat for any occasion!
In a medium mixing bowl, use an electric mixer to beat the softened butter until it's wonderfully smooth. Then, add the egg and vanilla extract, mixing until everything is well combined. Gently beat in the strawberry cake mix until you have a uniform dough. Pop this dough into the refrigerator for at least an hour to chill, which makes it easier to handle.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat – this makes cleanup a breeze!
Once the dough is chilled, use a cookie scoop or your hands to roll it into small balls, about 2 inches wide. Place them about 2 inches apart on your prepared baking sheet. Bake for about 10 minutes until they're lightly set. Let them cool on the baking sheet for a couple of minutes, then carefully transfer them to a wire rack to cool completely.

Slowly add the powdered sugar, mixing until you reach your preferred creamy consistency. You can use less sugar if you prefer a slightly less sweet filling!
Once the cookie shells are completely cool, it's time to assemble your delightful treats! Spread a generous (or a lighter, if you prefer!) layer of the strawberry cream cheese frosting onto the flat bottom of half of your cookies. Gently place another cookie on top of the frosting to create a perfect sandwich.
