Equipment

  • Hand Mixer
  • Mixing Bowls

Ingredients

  • 1 batch Keto Drop Biscuits
  • 1 pound fresh strawberries
  • 1 cup heavy cream
  • 1/4 cup monk fruit/allulose
  • 1 teaspoon vanilla extract
  • Stevia to taste

Instructions

  • First, prepare the batter for your Keto Drop Biscuits. Stir in the vanilla extract and monk fruit/allulose until well combined.
  • Bake the biscuits according to their directions, then set them aside to cool completely while you get your delicious toppings ready.
  • Place a glass or stainless-steel mixing bowl into the freezer to get nice and cold. While it chills, wash, dry, and slice all your fresh strawberries.
  • Pour the cold heavy cream into your chilled mixing bowl. Using a hand mixer, beat the cream until it starts to form soft peaks.
  • Add stevia gradually, tasting as you go, until you reach your desired sweetness. Continue mixing until the whipped cream forms stiff peaks.
  • Once the biscuits are fully cooled, carefully slice each one in half horizontally.
  • Spoon a generous dollop of the homemade whipped cream onto the bottom half of each biscuit.
  • Layer some of your sweet sliced strawberries over the whipped cream.
  • Gently place the top half of the biscuit back on.
  • For a beautiful finish, garnish with a little extra whipped cream and a strawberry half on top before serving immediately.
