Ingredients
  

Truffle Base

  • 12-15 sugar cookies crisp, about 5-ounce package
  • 2-3 oz cream cheese softened, light optional
  • 1/2 tsp vanilla extract pure

Chocolate Coating

  • 1 1/2 cups white chocolate melting wafers
  • colorful sprinkles optional, for decoration

Instructions
 

  • Place the sugar cookies into a food processor or blender. Pulse until they become very fine crumbs.
  • Add the softened cream cheese and vanilla extract to the crumbs. Blend until the mixture forms a soft dough.
  • Line a baking sheet with parchment paper. Scoop and roll the mixture into small bite-sized balls and arrange them on the sheet.
  • Freeze the truffle balls for 20 minutes or until firm.
  • Melt the white chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  • Dip each chilled truffle into the melted chocolate using a fork. Let excess drip off, then place back on parchment and add sprinkles before the chocolate sets.
  • Refrigerate the truffles until fully set. Serve chilled and store leftovers in an airtight container.

Notes

For a healthier twist, use low-sugar cookies and light cream cheese. You can also swap white chocolate with dark or milk chocolate.
