These easy no-bake sugar cookie truffles are creamy, festive, and perfectly sweet. A quick dessert made with crushed sugar cookies, cream cheese, and dipped in white chocolate for an irresistible bite-sized treat!
Place the sugar cookies into a food processor or blender. Pulse until they become very fine crumbs.
Add the softened cream cheese and vanilla extract to the crumbs. Blend until the mixture forms a soft dough.
Line a baking sheet with parchment paper. Scoop and roll the mixture into small bite-sized balls and arrange them on the sheet.
Freeze the truffle balls for 20 minutes or until firm.
Melt the white chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
Dip each chilled truffle into the melted chocolate using a fork. Let excess drip off, then place back on parchment and add sprinkles before the chocolate sets.
Refrigerate the truffles until fully set. Serve chilled and store leftovers in an airtight container.

For a healthier twist, use low-sugar cookies and light cream cheese. You can also swap white chocolate with dark or milk chocolate.
