Sweeten & Chill: Start by adding ½ cup of the powdered sweetener, mixing until combined. Stir in ½ teaspoon of peppermint extract. Then, gradually add the remaining 2 cups of powdered sweetener, ½ cup at a time, mixing thoroughly after each addition until your dough is smooth and firm. Taste a tiny bit – if you desire more peppermint flavor, gently knead in an additional ½ teaspoon. Place the bowl in the refrigerator to chill for at least an hour.
Add Some Color: Once chilled, take the dough out and divide it into two equal halves. Place each half on a clean, parchment-lined surface. Shape & Set: Pour the remaining ¼ cup of powdered sweetener into a small dish. Scoop out rounded tablespoons of the colored dough and roll them into neat balls. To prevent sticking, you can lightly dust your hands with a bit of powdered sweetener. Roll each dough ball in the powdered sweetener to coat it evenly, then place them on a parchment-lined baking sheet. Gently press the tines of a fork onto each ball to flatten it slightly and create classic lines across the top.
Final Chill: Transfer the baking sheet of mints back to the refrigerator and let them chill for at least a couple of hours. This helps them firm up perfectly.
