Ingredients
  

  • 8 ounces regular cream cheese softened to room temperature
  • 3 tablespoons unsalted butter softened to room temperature
  • 2.75 cups sugar-free powdered sweetener divided (such as Swerve or Lakanto)
  • 0.5 tsp peppermint extract up to 1 tsp, to taste
  • red and green gel food coloring or your favorite colors

  • Cream It Up: In a large mixing bowl, beat together the softened cream cheese and butter until the mixture is wonderfully smooth and creamy.
  • Sweeten & Chill: Start by adding ½ cup of the powdered sweetener, mixing until combined. Stir in ½ teaspoon of peppermint extract. Then, gradually add the remaining 2 cups of powdered sweetener, ½ cup at a time, mixing thoroughly after each addition until your dough is smooth and firm. Taste a tiny bit – if you desire more peppermint flavor, gently knead in an additional ½ teaspoon. Place the bowl in the refrigerator to chill for at least an hour.
  • Add Some Color: Once chilled, take the dough out and divide it into two equal halves. Place each half on a clean, parchment-lined surface. Add a few drops of red food coloring to one half and gently knead the dough until you achieve a beautiful pink hue. Add more coloring if you want a deeper shade. Repeat this process with the other half, using green food coloring, or any color you prefer!
  • Shape & Set: Pour the remaining ¼ cup of powdered sweetener into a small dish. Scoop out rounded tablespoons of the colored dough and roll them into neat balls. To prevent sticking, you can lightly dust your hands with a bit of powdered sweetener. Roll each dough ball in the powdered sweetener to coat it evenly, then place them on a parchment-lined baking sheet. Gently press the tines of a fork onto each ball to flatten it slightly and create classic lines across the top.
  • Final Chill: Transfer the baking sheet of mints back to the refrigerator and let them chill for at least a couple of hours. This helps them firm up perfectly.

Notes

Pro tip: Wear disposable gloves to avoid staining your hands when adding food coloring. Once firm, store your delightful mints in an airtight container in the fridge until you're ready to enjoy them!
