Ingredients
  

For the Cookies

  • 1 box red velvet cake mix about 15.25 oz
  • 1/2 cup unsalted butter softened to room temperature
  • 2 large eggs

For the Cream Cheese Filling

  • 1/2 cup unsalted butter softened to room temperature
  • 8 oz package cream cheese softened to room temperature
  • 1 lb confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • First, preheat your oven to 350°F (175°C).
  • In a mixing bowl, simply combine the red velvet cake mix, the softened butter, and the eggs. Mix these ingredients until they're just combined and form a smooth dough.
  • Grab a baking sheet and, using a spoon or a small (about 1.5-inch) ice cream scooper, drop spoonfuls of cookie batter onto it, making sure to leave about two inches of space between each.
  • Bake these delightful cookies for 10 to 12 minutes until they are lightly set. Once baked, let them cool completely on the baking sheet.
  • In a mixer, beat together the softened butter, cream cheese, and vanilla extract until the mixture is wonderfully smooth and creamy.
  • Gradually add the confectioners' sugar, continuing to mix until your filling is light, fluffy, and perfectly smooth.
  • Once your cookies are cool, take one and spread a good dollop of the cream cheese filling onto its flat side.
  • Gently place another cookie on top, pressing them together to create a charming sandwich. The filling should reach the edges.
  • Repeat this process with all your cookies and filling.
