Herb Butter

  • 1/2 cup unsalted butter 1 stick, softened
  • 3 cloves garlic minced (or 1/2 teaspoon garlic powder)
  • 2 tablespoons fresh thyme minced
  • 1 tablespoon fresh sage minced
  • 1 teaspoon fresh rosemary minced
  • 2 to 3 teaspoons salt adjust to your preference

  • 1 bone-in, skin-on turkey breast about 6 to 8 pounds

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a large roasting pan with aluminum foil for easy cleanup, then lightly grease a wire rack to set inside it. This setup helps your turkey cook evenly and get beautifully crisp.
  • In a medium bowl, combine the softened unsalted butter with the minced garlic, fresh thyme, sage, rosemary, salt, and black pepper. Mix everything together until it's well blended and fragrant – this is your secret weapon for incredible flavor!
  • Place the turkey breast on a clean cutting board. Gently loosen the skin from the breast meat. Using paper towels, pat the entire turkey breast thoroughly dry; this step is crucial for achieving that irresistible crispy skin.
  • Take about one-third of your prepared herb butter mixture and carefully rub it directly under the turkey skin. Smooth the skin back over the butter. Then, generously spread the remaining butter all around the outside of the turkey, ensuring it covers the bottom and any crevices. This locks in moisture and infuses flavor into every bite.
  • Place the buttered turkey breast on the prepared rack in your roasting pan. Roast uncovered for approximately 2.5 to 3 hours. Keep an eye on it, and roast until an instant-read thermometer inserted into the thickest part of the breast (be sure to avoid touching the bone) registers 160°F (71°C). If the skin starts to brown too quickly, simply tent it loosely with aluminum foil to prevent burning.
  • Once cooked, carefully remove the turkey breast from the oven. Loosely cover it with foil and let it rest for 15 minutes. This resting period is essential as it allows the juices to redistribute, ensuring your turkey is incredibly tender and moist.
