  • 1 whole turkey or turkey crown approx. 8-10 pounds
  • 8-10 ounces smoked streaky bacon

Herb Butter Mixture

  • 1 cup salted butter 2 sticks, softened at room temperature
  • 3 tablespoons fresh thyme leaves finely chopped
  • 3 tablespoons fresh rosemary leaves finely chopped
  • 2 lemons zest of

Instructions
 

  • Prep the Butter: Take your turkey out of the fridge about an hour before cooking to let it warm up slightly. In a bowl, combine the softened butter with the chopped thyme, rosemary, lemon zest, orange zest, salt, and pepper. Mash it all together until well mixed.
  • Prepare the Turkey: Remove any giblets from the turkey cavity and pat the entire bird thoroughly dry with paper towels. Carefully use a small, sharp knife to gently separate the skin from the breast meat, creating a pocket. Repeat this on both sides.
  • Flavor Infusion: Gently push about half of the prepared herb butter under the skin over the turkey breasts, spreading it as evenly as possible with your hands on the outside of the skin. Spread the remaining butter generously over the entire top surface of the turkey skin.
  • Bacon Cover: Carefully lay the bacon slices over the turkey breast, overlapping them slightly (criss-crossing helps keep them in place). Loosely cover the turkey in its roasting pan with aluminum foil.
  • Roast to Perfection: Preheat your oven to 375°F (190°C). Place the covered turkey in the preheated oven and cook according to its weight. A good guideline for a turkey under 10 pounds is about 45 minutes per pound, plus an extra 20 minutes (e.g., an 8.8lb turkey would cook for approximately 3 hours 20 minutes).
  • Baste and Brown: Every hour or so, spoon some of the pan juices over the turkey to keep it moist. About 1 hour before the estimated cooking time ends, remove the foil to allow the bacon and skin to crisp up and turn a beautiful golden brown.
  • Essential Resting: Once the turkey is cooked through (use a meat thermometer to ensure the thickest part reaches 165°F), remove it from the oven, leaving it in its roasting pan. Keep it covered loosely with foil, then place a clean kitchen towel or bath towel over the foil to trap the heat. Let it rest in a warm spot for at least 1 hour. This step is crucial for incredibly juicy and tender meat!
  • Carve and Serve: After resting, carefully pour the flavorful pan juices into your gravy (if desired). Transfer the turkey to a large platter, carve it as you prefer, and serve your delicious, juicy Christmas turkey!
