Preheat your oven to a cozy 425°F (220°C).
In a small bowl or a shaker jar, combine all the dry rub ingredients: kosher salt, chili powder, paprika, garlic powder, onion powder, dried oregano, black pepper, and chipotle or cayenne powder. Give it a good mix!
Generously rub this amazing spice blend all over both sides of your pork spare ribs. If your roasting pan is a bit small, feel free to cut the rack in half to make it fit.
Place the seasoned ribs in a large roasting pan. Pour 1 cup of water into the bottom of the pan. Now, cover the entire pan very tightly with aluminum foil to create a steamy environment.
Bake for 1 hour and 30 minutes. If you're cooking more than one rack, extend the time to 1 hour and 45 minutes. The goal is super tender, fall-off-the-bone meat! Occasionally, peek to ensure the water hasn't all evaporated; add a splash more if needed to keep things moist.
While your ribs are in the oven, preheat your grill or broiler. Once the ribs are done baking and wonderfully tender, carefully transfer them to the grill or under the broiler.
Grill or broil the ribs for about 4 minutes per side, watching them closely to prevent burning, until they develop a beautiful browned crust. If you like, brush them with your favorite sugar-free BBQ sauce before or after this step. Serve immediately and enjoy your incredibly tender and healthy ribs!
