Ingredients
  

  • 20 ounces frozen chopped spinach thawed and well-drained
  • 2 cups gluten-free breadcrumbs
  • 1 cup grated Parmesan cheese
  • 0.5 cup unsalted butter melted
  • 1 bunch green onions finely chopped
  • 3 large eggs
  • 1 cup shredded white cheddar cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder

Instructions
 

  • Get Ready: To start, preheat your oven to a cozy 350°F (175°C). For super easy cleanup, line a large baking sheet with parchment paper, or give it a light greasing.
  • Mix It Up: In a spacious mixing bowl, combine your thoroughly drained spinach, gluten-free breadcrumbs, Parmesan cheese, melted butter, finely chopped green onions, eggs, shredded white cheddar, salt, pepper, and garlic powder. Stir everything together until it's nicely combined.
  • Shape & Place: Using a small cookie scoop or your hands, gently form the mixture into uniform, bite-sized balls. Arrange them evenly across your prepared baking sheet. Keeping them a similar size helps them bake perfectly!
  • Bake to Perfection: Pop them into your preheated oven and bake for 20 to 25 minutes, or until they turn a lovely golden brown and are cooked all the way through. Serve these wholesome bites warm and watch them disappear!
