Ingredients
  

  • 2 1/4 cups Wholesome Yum Blanched Almond Flour
  • 1 tablespoon Cinnamon
  • 2 teaspoons Ground ginger
  • 1/4 teaspoon Ground cloves
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Sea salt
  • 1/2 cup Besti Brown Monk Fruit Allulose Blend
  • 3 tablespoons Unsalted butter softened
  • 1 large Egg at room temperature
  • 1 teaspoon Vanilla extract
  • Sugar-free cream cheese frosting optional, for decorating

Instructions
 

  • Combine Dry INGREDIENTS : In a medium bowl, simply stir together the almond flour, cinnamon, ground ginger, ground cloves, nutmeg, and baking powder.
  • Cream Wet INGREDIENTS : In a larger bowl, use a hand mixer to beat the softened butter and Besti Brown sweetener until it looks light and fluffy, usually for 1-2 minutes. Then, beat in the room temperature egg and vanilla extract until well combined.
  • Form the Dough: Gradually add the dry almond flour mixture to the wet ingredients. Beat until a soft, uniform dough forms.
  • Chill the Dough: Shape the dough into a ball, wrap it, and pop it in the refrigerator for at least 30 minutes. This helps it firm up and makes it much easier to work with.
  • Get Ready to Bake: Preheat your oven to 350 degrees F (177 degrees C). Line a cookie sheet with parchment paper. (You might need to prepare two sheets for all the cookies.)
  • Roll and Cut: Place your chilled dough ball between two large pieces of parchment paper. Roll it out evenly to about 1/4 inch (.6 cm) thickness. Use your favorite cookie cutters to make fun shapes and carefully transfer them to the prepared cookie sheet. Gather any dough scraps, re-roll them, and continue cutting until all the dough is used.
  • Bake to Perfection: Bake the cookies for 10-15 minutes, or until their edges turn a lovely golden brown. Let them cool completely on the cookie sheet before you move or frost them.
  • Decorate (Optional): If you desire, whip up some sugar-free cream cheese frosting and pipe it onto your cooled gingerbread cookies for a festive touch!
