First, get a large baking sheet ready and line it with parchment paper. This makes cleanup super simple!
Take your Red Velvet Oreos and toss them into a food processor. Pulse them until they turn into fine crumbs. If you don't have a food processor, just pop them in a sturdy Ziploc bag and crush them with a rolling pin!
Add the softened cream cheese to the cookie crumbs. Mix again until everything comes together into a soft, uniform dough.
Scoop out about one tablespoon of the dough and roll it smoothly between your hands to form a neat ball. Place each ball onto your prepared baking sheet. Keep rolling until all your dough is used up.
Pop the baking sheet with your freshly rolled truffle balls into the freezer for about 30 minutes. This helps them firm up perfectly for dipping.
In a microwave-safe bowl, gently melt your green candy melts. Heat them in short 30-second bursts, stirring well after each time, until they're smooth and fully melted. Quick Tip: If your candy melts seem a bit thick for dipping, stir in ½ to 1 teaspoon of coconut oil or any unflavored oil to thin them out.
Using a chocolate dipping fork (or a regular fork), carefully dip each chilled truffle ball into the melted green candy, making sure it's completely covered. Let any extra drip off, then place the coated truffle back onto the parchment-lined sheet. Repeat for all your truffles.
While the green coating is still wet, transfer any leftover melted candy melts into a piping bag (or a small Ziploc bag with a tiny corner snipped off). Drizzle a little bit over each truffle, then immediately place a red heart sprinkle on top to create that classic Grinch heart look!
Put your beautiful truffles back into the fridge for a few minutes to allow the coating to fully set. Once firm, they're ready to steal the show!
